The story of the family goes back to the 19th century.
A vine grower and a wine maker Petr Skoupil, has divoted his life to the viniculture since he was 23 and he has been running the winery continuously since 1992.
He gathers knowledge from the historical roots of the grapevine cultivation and the wine production in the region of Velké Bílovice.
35 hectars of own vineyards are very carefully maintained with an emphasis to ecofriendly techniques and reduced crop of grapes. Due to such exigent care,
his vineyeards remunerate a magnificent raw material for the wine production.
The wine grower, however,is simultaneously looking all the time for his own way to make wines of an excelent quality. On this way, he endeavours to the most cautious elaboration of grapes, both mechanically and by limited application of preparations.
The entire elaboration process of the top raw material, which comes from reduced harvest, starts immediatelly after the collection of grapes.
Berries are separated from the stalk in a particular fingerlike selector (Euroselect), which preserves whole, undamaged berries and hinders the extraction of undesirable chlorophyll and bitterness from the stalk and seeds.
The berries are then charged in a pneumatic press by a belt conveyor, from which leave as a high-class free-run must. After a must clarification by a flotation process,
a perfectly mastered technology of the controlled fermentation succeeds, followed by a subsequent maturing of selected lots in the French oak barrels.
The process results in the varietaly pure and rarely interesting predicat wines. They are specific by a broad spectrum of primary flavoury matters and above all a distinctively fruity character with the minimal of bitterness.
In the offer, there are all grades, beginning with Kabinett wines, refined Late harvests and Selections of grapes, occasionally accompanied with the residual sugar, and with jewels like Selectiones of berries, Straw wines and Ice wines.
